A CAREFUL PRODUCTION FROM THE VINE TO THE BOTTLE
The pruning of tall and wide vines:
typical of the Hautes Côtes de Nuits
A work of the vine without service provider mastered by our team.
Soil work carried out with the use of organic fertilizers to limit the chemical input into the soil.
An organic approach undertaken since 2018 with the aim of obtaining the organic label in 2026.
A true respect for life
T he Domaine de Montmain produces local wines expressing the purity of its climates. Each plot is vinified in small adapted vats and worked in accordance with Burgundy traditions.
Harvesting is always done manually with experienced teams. Anxious to harvest ripe and healthy grapes, we carry out a first sorting in the vineyard then a second on a vibrating table.
The vinifications are done in the old way in order to get the maximum flavor from our grapes.
Filling of oak barrels
Careful work carried out for more than 20 years by our Cellar Master Tomasz BLONSKI.
Rigorous work that leaves no room for chance.
This work is followed by regular filling of the barrels (topping up) an essential step to avoid oxidation of the wines.
Every detail counts to obtain the quintessence of the wine.
